I usually boil more potatoes than we would need for one meal, because then I am half ready for next one :P

Roundabout pie
I saw a pie here ... and fell in love with the idea of arranging the veggies in circles and then I made my own - of course I didn't follow the original instructions. Apparently I take pride in reinventing the wheel. :P
Base:
3 sheets of frozen puff pastry
Now after quite a few pies I have a routine set for my own vegetable pie :)

200g cream cheese (in Latvia the clear choice is "Dzintars" for all of you who doesn't live here .. well I just hope you have something similar in your stores too)

Chantarelle pie second eddition
Few days ago was a pie day in my household :)
I baked 2 (one savory and one sweet) and they both had dissapeared till we went to bed ... we must have been verrrry hungry :D
This time I changed the filling (and it worked for better):
300g cooked chanterelles
1 egg-white
100g cheese in small cubes (although grated probably would have been better)

1/2 paprica in small cubes
a pinch of salt and pepper
Base is still the same old shortcrust pastry:

Salmon lasagna - Salmagna!
Spring is coming!
To brighten up our weekly meal plans as well as our mood (I have been quite gloomy this week because Sam is teething and enjoys to be carried around all day long (including naps, god forbid I try to put her in bed .. )).
so I was browsing hypermarket and thinking about the good old boring (well our regular, kid approved) meals and i ran in to salmon and so the idea of my own salmagna was born :)
few hours later it was baked and minutes after that it was gone. to be clear - it wasn't just four of us who ate it.. Sam loved it, but I am not sure Oli even tried it because he saw grandma with the cake just before we sat down for dinner...
but the fact it disappeared so fast means it was good and will be reappearing in our weekly meal plans :)
and hopefully next time there won't be any distractions and Oli will at least try it .. (he is going through some weird phase. if we let him he would eat only cookies and drink milk .. just like Santa Claus :D)

Chanterelle pie
A while ago I unexpectedly got a big basket of chanterelles from my hubby's aunt, so I thought I should make something more interesting than chanterelle sauce and fill up a jar for winter (I did those too, but the pie was a challenge to make something different than usual)...
So I made a savory pie!
Recipe is nowhere near perfect, but to remind myself what I did when I get the next big basket of chanterelles and try to make this pie even better ... :)
This pie tastes better on the second day ... I think it's because when it's right from oven the shortcrust pastry makes it kind of dry ... next time I would add some tomatoes, cauliflower or something to make it juicier right from oven ... to enjoy it while it's still hot :)

recipe: chicken n' cheese!
I will tell you how to make my family's favourite sauce! :)
It takes less than an hour to make and there will be enough for at least four people (depends on how hungry you are and how much you usually eat).
For me it tastes better with rice, but my husband prefers potatoes.. actually it is really good with buckwheat or pasta too.
Ingredients:
1 or 2 chicken fillets (depends on how much meet you'll want)

1 paprica
2 tomatoes (I chose the yellow tomatoes just to make the sauce colorful)
a bit of salt, pepper and a teaspoon of cooking oil too
Cookware:
knife
cutting board
big frying pan
wooden spoon
