Roundabout pie

I saw a pie here ... and fell in love with the idea of arranging the veggies in circles and then I made my own - of course I didn't follow the original instructions. Apparently I take pride in reinventing the wheel. :P
Now after quite a few pies I have a routine set for my own vegetable pie :)

Base:
3 sheets of frozen puff pastry

Filling:
1 egg
160g curd
200g cream cheese (in Latvia the clear choice is "Dzintars" for all of you who doesn't live here .. well I just hope you have something similar in your stores too)

Decoration:   ;)
1 beet (boiled, cut in strips)
2 potatoes (boiled, cut in strips)
2 carrots (boiled, cut in strips)
1/2 zucchini (cut in strips)
100g cheese (cut in strips)
100g sausage (cut in strips)
drop of oil

as you can see - decorations list may
and should vary from pie to pie ;)

Chantarelle pie second eddition

Few days ago was a pie day in my household :)

I baked 2 (one savory and one sweet) and they both had dissapeared till we went to bed ... we must have been verrrry hungry :D

This time I changed the filling (and it worked for better):

300g cooked chanterelles
1 egg-white
100g cheese in small cubes (although grated probably would have been better)
150g sausage in small cubes
1/2 paprica in small cubes
a pinch of salt and pepper

Base is still the same old shortcrust pastry:
220 g flour
1 egg yolk
160 g butter
2 tbsp cold water
a pinch of salt

Debris!

In honor of the end of construction or reconstruction in our apartment I am making my hubbies favorite salad and thought I could share our recipe. He calls them construction waste aka debris.
To be honest I make them quite often because I like to open a fridge and find something almost healthy already ready to eat :)
Besides it took me only half an hour to whip them up this time (well I am not counting the time I spent boiling staff) and another great feature - while making I can leave them at any point and come back later to finish (just need to remember to put the knife further away before I go) and this bowl will last at least two meals (and few refrigerator raids during the day and sometimes night) so it's a great time saver for me :)

Ingredients:
300g boiled potatoes
2 boiled carrots
2 hard boiled eggs
400g canned green peas
400g pickled cucumbers
300g sausage

plus:
~150g mayonnaise
~150g sour cream
3tsp horseradish (mārrutki)
salt
pepper

Cut all of the ingredients into small cubes. Except green peas (for obvious reasons) and eggs I just smash "to dust" with fork... then add everything else and you have loads of delicious debris :)

Bon apetit!

Chanterelle pie

A while ago I unexpectedly got a big basket of chanterelles from my hubby's aunt, so I thought I should  make something more interesting than chanterelle sauce and fill up a jar for winter (I did those too, but the pie was a challenge to make something different than usual)...
So I made a savory pie!

Recipe is nowhere near perfect, but to remind myself what I did when I get the next big basket of chanterelles and try to make this pie even better ... :)
This pie tastes better on the second day ... I think it's because when it's right from oven the shortcrust pastry makes it kind of dry ... next time I would add some tomatoes, cauliflower or something to make it juicier right from oven ... to enjoy it while it's still hot :)

Breakfast treat :)

This is one special morning - our BabyBoy Oliver is already one week old!
For this special day I have made something special for our breakfast ... lets call it a waffled egg :)
It took me less than 10min to whip it up.
Well I have to admit it, I just threw things together... I bought the waffles, warmed up white chocolate, poured it onto the waffle (It takes up loads of chocolate, because of the big waffle holes) and put an apricot half in the middle :)

spring has come!

While I'm still coloring the easter eggs (traditional style, with onionskins) a bright orange butterfly (made after this scheme) has decided to visit my bowl of already colored yummies :)

Happy easter everybody!!! ;)
eat loads of eggs (don't forget about the salt! It's said that whoever eats eggs without salt during easter will be telling lies all year long), and swing and sway all day long (to keep those mosquitos away), but most important - have fun! ;)
