Sweet curd pie

Sweet pie that my kids loved so much :)
and why wouldn't they - it had soooooo much sugar in ...


Base is the sweet shortcrust pastry:
160 g butter
100g sugar
220 g flour
1 egg yolk

Filling:
1 egg-white
2 eggs
300g curd
100g sugar
200g flour
1 grated apple
1/2 teaspoon baking powder
a pinch of vanilla sugar

Short instructions:
Make shortcrust pastry: heat butter, add sugar, mix, add flour and egg yolk, mix. Fill the base of the chosen baking pan.
Make the filling: Whip the eggs. Add sugar, mix. Add curd, mix (I usually use fork here to break curd in smaller pieces). Add grated apple, mix. Add flour, baking powder and vanilla sugar, mix. fill the unbaked base.
If you have any leftover pastry you can drop small pieces of it on the filling ;)
Put it all in the oven for 45min.
